So I ordered some Primitivo juice from Beer and Wine Hobby in the fall, and for whatever reason, I didn't start a post for it. And then didn't record when it was done fermenting on the yeast that it came inoculated with, or that they were out of malolactic cultures so I didn't get or use one, or that I racked it, or that it tasted pretty good. Which is all very unlike me, but there you are. So I'm thinking I'm going to bottle it today, and figure this may be the last time to record that I'm doing something with it (actually, I suppose I could put in a cryptic entry when I finish the last bottle...)
So, reconstructing from memory, receipts, and pictures:
9/14/2015
Ordered 6g of Mosti Mondial Italian Primitive Juice from Beer & Wine Hobby
10/28/2015
I took a photo of the label - Lot 20150430, so that must be the day I picked it up. IIRC fermentation had not quite started (got it on time this time). Did nothing - it was inoculated with yeast and didn't seem to need any acid or sugar correction.
Probably a week later
Primary fermentation probably done. Racked into secondary.
Probably a month after that (vague memory) - early/mid December
Racked into clean secondary. Tasted it - it tasted pretty good for a young wine.
